The characteristic odors of materials are created by the complex interactions of their odor constituents. In the odor recognition mechanism, one odorant molecule is recognized by several olfactory receptors, and one olfactory receptor responds to several odor molecules. In this way, the combination of several constituents with similar structures creates an odor that is not just the sum of the odors of each constituent. To clarify the aroma profiles of the materials, we developed a new analytical method called aroma profile analysis. This method has shown that the odor constituents of materials are composed of several groups containing constituents with similar molecular structures.
